Since that we keep a leading position among pasta producers in our country. All types of MALMA noodles are in 100% manufactured from the high quality Canadian wheat Amber Durum N1. All MALMA products have quality certificates both ISO and HACCP. MALMA sells its products in Italy, France and many other countries. The company also offers stuffed dumplings (pierogi), potato gnocchi (kopytka) and pizza.
MALMA GOURMET
MALMA was rewarded with a special prize of Slow Food Poland for its line of Gourmet pastas. The MALMA Gourmet products refers to the old Neapolitan tradition of XVIII century, when the pasta was manufactured from the best quality of durum wheat of Polish origin. Nowadays Polish climate is not good enough for Durum wheat raising so MALMA imports the high quality wheat from America.
The Amber Durum wheat is raised in Canada in the region where rains only two weeks a year. Polish farmers brought the wheat seeds from Kresy when they emigrated to Canada on the turn of XIX century. The climate of this region is very good for wheat raising what allows getting great gold and amber colour of the wheat and very high durability necessary in production of good pasta. The wheat imported from Canada is ground in Poland in the own MALMA’s mill what guarantees high quality of semolina.
The MALMA pasta is special not only because of the high quality of semolina but also because of its unique production process. The production cycle takes 24 hours, the pasta is manufactured very slowly with use of starter (zakwas) what enables to keep all nutritive values and vitamins. The shape of pasta is extruded through the special bronze dies giving a porous surface of the pasta that let to mix perfectly the pasta with sauces.
The best quality of semolina as well as the production process gives to the Malma Gourmet pasta unique gold colour and sophisticated taste.
This year the MALMA company was rewarded with The Special Prize of Slow Food Poland for “launching to the Polish and international market the line of GOURMET pastas that - according to the one of the biggest Italian cuisine experts – Mr. Luigi Veronelli - are the best in every respect”.
MALMA DUMPLINGS (PIEROGI)
MALMA is know not only with respect to pasta, but also to fresh dumplings stuffed with many different fillings made according to old Polish traditional recipes.
Actually MALMA dumplings are available with the following six fillings: dumplings stuffed with meat, with sauerkraut and mushrooms, Russian dumplings (pelmeni), stuffed with cheese and raisins, stuffed with poultry meat and with blueberries. Soon we will offer next taste – strawberry filling.
MALMA dumplings are produced from the high quality specially selected natural ingredients according to the old Polish traditional recipe. Special production process allows to keep full nutritive values and natural taste: the dough is prepared not earlier but on the day of production, the finished product is pasteurised and chilled in only 20 minutes. The ready dumplings are manual packed, what guarantees the best product quality control. Each packaging has separate pocket for every one piece of dumpling. Due to this the dumplings are not sticking and keep the same form.
MALMA dumplings are fresh products. They have only 21-day expiry date from the date of production that guarantees freshness and high quality of products.
MALMA has started dumplings production in September 2002. Products are manufactured in a factory located in Wroc³aw. The factory was built in 70’s. MALMA employs there 115 persons. Every day the factory produces 2300 kg of fresh dumplings. | | | |  |  |
